The main concern with carbon in a planted tank is that when you add trace fertilizers to the tank you're mainly feeding the carbon rather than the plants. I can't really speak to how significant this is in practice I'd imagine it would depend a lot on how often you swap out your carbon ; but it's definitely a possibility.
